As someone who has always skipped breakfast and barely had time for lunch, I have decided to take the plunge and give intermittent fasting a try.
In order to make this transition as seamless as possible, I have turned to the practice of meal prepping, ensuring that I always have delicious, nutritious meals readily available in the fridge.
Meal prepping is an absolute game-changer when it comes to saving precious time, hard-earned money, and making healthier food choices. Chicken Katsu Curry
Of course I simply had to whip up a scrumptious curry, no doubt about it!
Chicken katsu curry with noodles. This flavourful dish provides me with the perfect balance of lean protein, complex carbohydrates, and essential nutrients. With a delightful blend of aromatic herbs and spices, each bite is a true delight for the taste buds.
Stuffed Peppers
For those craving something a bit more vibrant, stuffed peppers are another fantastic option. Bursting with an assortment of colourful vegetables, these stuffed peppers are not only visually appealing but also incredibly nourishing. Packed with vitamins and minerals, they serve as an excellent source of dietary fiber, to hopefully keep me satisfied throughout my fasting period.
Stuffed Mushrooms
Turning to mushrooms, I have discovered a delectable way to enjoy them. Stuffed mushrooms are a bite-sized treat that combines the earthy flavors of mushrooms with the richness of a savory filling. Whether it be a mixture of cheese, herbs, or even a blend of minced meat and vegetables, these stuffed mushrooms are a versatile option that can be customised to suit any palate.
Diced Beef with Sweet Potato Mash
Of course, no meal prepping session would be complete without a hearty main course option. Diced beef with sweet potato mash and vegetables has become my go-to recipe for a fulfilling and nutritious dinner. Tender beef chunks combined with the natural sweetness of sweet potato mash and a vibrant medley of vegetables create a wholesome and flavoursome meal that never fails to satisfy.
Feeling optimistic and determined for this new chapter in my health journey. Who knew meal prepping could be so fun and rewarding? Can’t wait to see where intermittent fasting takes me, both mentally and physically.
